Watermelonrind Halwa
- Peel off the green skin from 600 g watermelon rinds using a knife. Grate the rind and squeeze out any excess water.
- In a pan, melt 1 tbsp of vegan butter. Add 2 tbsp of nuts and roast for 1-2 minutes on low to medium heat (be careful not to burn them!).
- Add 1 tbsp raisins and continue to roast for another minute.
- Transfer the nuts and raisins to a bowl or plate and set aside.
- Add the grated rind and 1/2 tsp of cardamom to the pan. Stir and cook on low heat, covered, for approx. 10 minutes. Once the rind has softened, add 2-3 tbsp of cane sugar. Continue to cook, stirring regularly.
- Add another tbsp of vegan butter and continue to stir until the mixture thickens.
- Once thickened, remove the pan from the heat, add the nuts and raisins, and serve. It’s nice served warm, but you can also let it cool down or refrigerate. This recipe serves 2 small eaters ;-).
