Agave Sweet Strawberry Jam

When it comes to jams, my favorite ones are those who reveal the most authentic flavor of the fruit that it’s made of. Often it disappears behind a lot of sugar. This very simple but delicious jam makes sure you have the smell of freshly picked strawberries in your nose when you eat your jam bread! Guaranteed!

As the purity of this recipe is to an increased amount realised in this Strawberry Jam recipe, make sure you empty the jar within 2 days, maximum 3, as it has no preserving agent and starts to ferment fast. So make this jam only when you or one of your kids ask for Strawberry Jam 🙂

Some Strawberry Jam notes:

As I want to keep my recipes as simple and least expensive as possible, I don’t use any thickener to make this jam. This is also why I prefer to sieve the jam before use, to make sure it is not too liquid. The preserved juice is delicious and can be used in drinks of all kind! However, if you feel this jam like consistency is missing, try with 1/2 tsp of agar agar powder. Just add it to the mixture before placing it on the fire.

The ginger gives a certain oriental touch to it. You can omit it, add some flavor of your choice like orange or lemon zest. I kind of like also a minty touch in my strawberry jams. Therefore I use organic mint essential oil. As this oil is very strong and only recommended to be used in sensitive amounts for cooking, I put one drop of the oil on my finger, dip slightly the tip of a knife into it so it is lightly infused, and stir with this knife into the jam. This should give a nice minty flavor.

Ingredients
  

  • 250 g fresh strawberries
  • 3-5 tbsp agave syrup
  • 1/2 tsp fresh ginger, grated or chopped optional

Instructions
 

  • Hull the strawberries, then dice them into small pieces.
  • In a saucepan, cook the strawberries together with the ginger over medium heat, stirring frequently, until the mixture comes to a boil. Reduce heat to a simmer and cook for about 15 minutes.
  • Take the mixture off the heat, stir in some agave syrup. Adjust to your taste.
  • Pour the mixture through a sieve, preserving the juice. Pour the remaining jam into a sterilized jar. Refrigerate and enjoy!
