Heavenly Dried Tomatos And Pine Nuts Spread
I adore dried tomatoes! They capture the essence of the summer sun and when you use them they brighten up our these days slightly too chilly mountain house. What a delight they are! What a joy to incorporate them into a light and delicious dinner spread.
We are so fortunate to have access to ingredients now here in Northern Portugal that were once hard to get in the Alentejo. Dried tomatoes without oil are one such treasure. Fine pine nuts are another. Roasted in a pan and blended finely with the tomatoes and some tomato puree, they create the most exquisite and addictive spread!

Can I use oil-packed dried tomatos instead?
Yes. Dried tomatos that come in oil work very well too. Just omit the extra spoonful of olive oil and drain the tomatos well. Adjust to your taste and favorite texture.
Heavenly Dried Tomatos And Roasted Pine Nuts Spread
Equipment
- 1 food processor
Ingredients
- 80 g dry-packed tomatoes
- 50 g pine nuts
- 225 ml tomato puree
- 1 tbsp olive oil
- 2 tbsp water
Instructions
Soaking the dried tomatos
- Soak the dried tomatos in hot water for ca. 30 minutes until nice and soft.
- In a pan, roast the pine nuts until golden brown.
- Drain the tomatos and cut them in pieces. Blend them with the rest of the ingredients until you have a smooth mixture. You might need to add 2-3 tbsp of water.
- Enjoy on a nice homemade bread or with your preferred pasta!
