Fennel green and sesame pesto

What a delight – to mix greens fresh from the horta (portug. for vegetable garden) with toasted white sesame seeds, high quality extra virgin olive oil and local salt! This pesto is made from the fine green fennel leaves, that very probably people would normally throw away, blended with a few garlic leaves.

Enjoy this simple accompaniment to a fine pasta, some gnocchi or simply on freshly baked bread.

Equipment

  • 1 immersion blender

Ingredients
  

  • 1/2 cup sesame seeds
  • 3/4 cup young fennel greens, finely cut
  • 2 garlic leaves, cut into pieces (optional)
  • extra virgin olive oil
  • salt

Instructions
 

  • Toast the sesame seeds.
  • Place the greens into the blender cup, fill up with olive oil until it covers the greens.
    Blend.
  • Add the sesame seeds and a few pinches of salt, continue to blend.
  • Adjust with salt to taste.
    Enjoy!

Notes

You can store this pesto in a jar up to 1 1/2 – 2 weeks.
