Strawberry, Watermelon Rind & Mint Icecream (no-churn)

It is truly amazing what you can do with watermelon rind! Normally, we throw this part of the beloved melon into the bin. Not anymore! This icecream blends a few pieces of peeled rind with fresh berries such as strawberries and mint, is very easy to make – you only need a hand blender, a tupper box and a freezer – and it is sweetened only with agave nectar. Enjoy!


Strawberry, Watermelon Rind & Mint Icecream

Equipment
- 1 Blender
Ingredients
- 1/2 cup vegan cream see recipe link for a homemade one
- 1 handful strawberries greens removed
- 3-4 chunks watermelon rind peeled
- 1/2 handful fresh mint only the leaves
- 3/4 cup plant milk
- agave nectar to taste
Instructions
- Blend all ingredients together until smooth. Sweeten with agave to taste.
- Pour the mixture into a tupper box with lid. Freeze for 1-2 hours.
- Remove the frozen mixture from the box, break it in pieces and blend it again. I use an immersion blender, which works also well.
- Freeze again for 30 minutes to 1 hour.
- Let soften a little at room temperature before serving.
