Basic Apple Sauce

Apple sauce, known as Apfelmus in Austria, is a super super simple yet versatile dish made from cooked apples. Traditionally, it’s enjoyed as a side dish, often paired with meals like Kaiserschmarrn or savoury (meat) dishes in Austria, but it also serves as a comforting snack or dessert on its own. And: Babies and small kids just love it!

In recent years, apple sauce has gained popularity beyond its role as a sweet or savory addition, becoming a staple in vegan baking. Its natural moisture and mild sweetness make it an excellent replacement for eggs or butter/oil, adding texture and moisture to cakes, muffins, and even cookies.

My basic apple sauce recipe sticks to the essentials — just apples and water. This minimalist approach allows the natural flavor of the apples to shine. From there, you can customize it depending on its intended use. If you’re using it for baking, you might add a sweetener or cinnamon to enhance the flavor. For a richer, creamier version, stirring in some cold vegan butter at the end gives it an extra touch of indulgence.

Ingredients
  

  • 4 medium apples
  • water

Instructions
 

  • Peel, deseed and cut the apples in little cubes.
  • Place the apples into a saucepan, cover half with water, bring to a boil and let simmer on low heat, pan covered, for 15-20 minutes, stirring occasionally, until the apples are soft and starting to break down.
  • Mash or Blend:
    For a chunkier texture, use a potato masher or fork to mash the apples. For smoother applesauce, blend the mixture using a hand blender or transfer it to a blender.
  • This is the basic version.
    For an immediate dessert you might want to season it with agave nectar, some cinnamon, or add a little cold butter to the warm sauce.
