Indra‘s Pure Guacamole (onion-, garlic-free)

We love to celebrate our pancake Sundays! It is always a feast, at least it’s Indra‘s Guacamole that there is. We adopted the habit of having sugary and savory fillings likewise, to have a healthier balance.

    Here Indra has blended the avocados with some sesame oil, herbes de Provence, soy sauce and pepper.

    Why do I love my husband’s Guacamole so much?

    1. it doesn’t need onions and garlic to be enjoyable, the sattvic aspect is fully respected.
    2. it is simple and quickly prepared.
    3. it tastes so pure!
    4. perfect for a pre-meditation meal!

    Indra‘s Pure Guacamole 🥑

    This Guacamole 🥑 features avocados in their highest purity, combined with some slight sweet-sourness of a tomato. Enjoy this lovely side dish!

    Ingredients
      

    • 2 ripe avocados
    • 1 – 1,5 tsp good olive oil, sesame oil or similar
    • 1/2 tsp salt or soy sauce
    • fresh or dried herbs of choice
    • 1 pinch black pepper
    • 1/2 tomato
    • a little lemon juice

    Instructions
     

    • Cut the avocados in half. With a spoon, scrape out the flesh. Remove the kernel.
    • With a fork, mash the avocado flesh.
      Alternatively you can blend them a little together with the oil, herbs, salt or soy sauce and pepper with an immersion blender.
    • Cut the tomato in tiny pieces.
    • Combine the avocados mash, the tomato pieces, the oil, herbs, salt or soy sauce and pepper if you haven’t done so yet, squeeze a little lemon juice on top, combine everything and adjust with salt or soy sauce and maybe some more pepper.
    • Serve with some nice vegan pancakes or some freshly made bread (see recipe links below)!

    Notes

    Tipp: To give this Guacamole a herbal twist, add some dried herbes de Provence or fresh herbs such as basil or thyme, if you have. 
    Lovers of spiciness will be happy with some added piri-piri 🙂
