Pear & Apple Walnut Cake
When it comes to lovingly combine ingredients to a tasteful meal, the best way to create something is let it flow, not thinking too much but following your intuition. It might not always turn out the way you imagined it. But this is exactly the joy of creation.
This lovely cake has been born in this way. First the inspiration still lying in bed – an image of an apple cake popping up. Later looking what I had, how cannot I make a similarly looking delicious cake with this? And the: just do. Try.
I love the perfect blend of earthy flavors of this cake. Not too sweet but sweet enough to be recognized as a cake and enjoyed as such 🙂

Pear & Apple Walnut Cake
This delicious cake features ripe pears and juicy apples, combined with walnuts, olive oil and sweetened with raw cane sugar. Enjoy!
Equipment
- 1 oven tray
Ingredients
- 2 1/4 cups all-purpose flour
- 3/4 cup oat flour
- 3/4 cup cane sugar best raw
- 2 tsp baking soda or 1 1/2 tsp baking powder
- 1/2 cup olive oil
- 1 lemon zest and juice
- 1/2-1 cup water
- 1 ripe pear
- 2 apples
Instructions
- Heat the oven to 180 degrees (top and bottom heat). Grease and flour your oven tray or use baking paper.
- First combine the dry ingredients.
- In another bowl combine the oil, lemon juice and zest.
- Add the oil mixture to the dry mixture, combining well with a wooden spoon or spatula.
- Now add some water. Try to feel how much more liquid the batter needs. It should have a soft dropping consistency, not too liquid and not too sticky or firm. Max. 1 cup of water should suffice.
- Pour the batter into your prepared oven tray and even nicely with a spatula.
- Peel and cut the fruits. Slice both. Place the slices on top of the batter.
- Bake until golden brown on top (depending on your oven about 30-40 mins.). Enjoy!
