Steamed Lemon Cake
What a delight! These cakes made in a steaming oven have become my favorites! They are so soft, moist, fluffy, and truly satisfying. So delicious this lemon flavor in this new version in my steamed cake series – see also my Steamed cake with peanut butter cream recipe!

Steamed Lemon Cake
This steamed cake is so deliciously lemonish – perfect with the accompaniment of a sugar-free jam!
Equipment
- 1 steamer oven
- 1 rectangular cake tin (ca 20×32 cm)
Ingredients
- juice of 1 large lemon
- zest of 1/2 bio lemon
- zest of 1 bio orange
- 3/4 cup cane sugar
- 3 tbsp peanut butter
- 2/3 cup soy milk
- 1 2/3 cups white spelt flour
- 1/2 cup oat flour
- 1 3/4 tsp baking soda
- 1 tsp baking powder
- 1 pinch salt
- little olive oil and more flour for the tin
- 1 jar jam (100% fruit content)
Instructions
- Oil and flour the tin.
- Whisk all ingredients except of the flours together.
- Sieve in the spelt flour. Fold in the oat flour.
- Spread the batter into the tin.
- Steam with 100℃ for 35 minutes.
- Carefully incline the tin snd let the excess water ran off first before taking off the frame. Serve with a few spoonfuls of jam with 100% fruit content per piece.
