Woodstove Peanut Pasta One-Pot
There’s something deeply enjoyable about cooking on a wood stove. It’s not just the warmth it radiates, but the way it brings you closer to nature. In winter, it’s nice and warm, accompanied by the cracking sound of the fire, and more convenient since you need to heat the room anyway. Today, I embraced that cosy simplicity and made a hearty peanut vegetable pasta one-pot, letting the fire do its magic.
This dish wasn’t planned; it came together with what I had on hand. Sweet carrots, earthy potatoes, tangy tomatoes, and vibrant broccoli formed the heart of the dish. The spices were a mix of comfort and adventure: garam masala for its warmth, turmeric for a subtle earthiness, and a sprinkle of paprika and cinnamon to add depth. Thyme and herbes de Provence added a fragrant herbal note, tying everything together like a melody.
The star, however, was peanut butter. A dollop stirred in towards the end gave the dish its creamy, nutty richness. It’s incredible how such a simple addition can transform a pot of vegetables into something so satisfying. And a nice conchiglie pasta of course! This wasn’t just a meal — it was a reminder of how cooking can ground us in the present.

Simple Woodstove Peanut Pasta One-Pot
Ingredients
- 2 tbsp oil
- 2 carrots, peeled and cut into large chunks
- 1 1/2 tsp garam masala
- 3/4 tsp turmeric
- 1 tsp paprika powder
- 2 twigs thyme
- 1/2 tsp cinnamon
- 2-3 tsp herbes de Provence or other dried herbs
- 2 medium potatoes, peeled, cut into eights
- 1 large tomato, diced
- 1/2 broccoli, divided into florets
- 3-4 tbsp peanut butter
- 2-3 handfuls pasta (conchiglie, orecchiette, ditalini or similar)
- salt, pepper
Instructions
- Roast the carrots, spices and herbs in the oil on low to medium heat until fragrant.
- Add first the potatoes, let them take flavour, then the tomatoes.
- Fill the pot with water 1:1.5 in relation to the ingredients (1.5 times more water). Add some salt. Cover with a lid and let simmer for 12-15 minutes.
- Add the broccoli, peanut butter and pasta. Cook until the pasta is al dente (ca. 7 minutes, but see the packet for the time).
- Season with salt and pepper to taste and serve.
