Parasol mushrooms
Parasol mushrooms are making their presence known in abundance this season, standing tall and graceful like umbrellas popping up in fields and forests. Their delicate, nutty flavor makes them a versatile ingredient in a range of dishes. As they appear now, it’s almost as if they’re cheerfully greeting us, inviting us to enjoy the gifts of autumn. These mushrooms are easily recognizable by their wide, flat caps and scaly surfaces, and they are a favorite among foragers.
How to prepare parasols
We’ve been enjoying the bounty of parasol mushrooms these days by incorporating them into different dishes. From lightly sautéing them with herbs to breading and frying them or adding them to soups, their unique flavor has given us happy moments in our kitchen. Thanks to their looks and texture, they also make a great substitute for meat or fish in vegan-friendly meals. Try to replace the cod in a fish soup recipe (chopped or finely broken in pieces) and you will get a delicious “I love you fish – soup” and be surprised as I am!
