Vegan Apple Cheese Tart

Recently, I finally took the plunge into vegan cheesecake baking — long overdue! 😊 Instead of making a traditional cheesecake, which requires a hefty amount of cream cheese, I decided to put my own spin on it and make a cheese tart, incorporating some apples we had at home for a touch of fruitiness. The result was absolutely delicious.

The filling is incredibly simple, made with homemade vegan cream cheese from soy or oat milk (see instructions for making your own vegan cream cheese), combined with cornstarch and cane sugar—that’s it! For an extra hint of flavor, you can add some lemon zest for a bright, citrusy note.

To assemble, I started by slicing the apples and cooking them briefly with a little water to soften them. Then, I layered the apples onto the pre-baked tart crust and poured the vegan cream cheese mixture over the top.

The result is a delicious, simple, vegan cream cheese and apple tart that’s sure to delight. Enjoy!

Ingredients
  

For the crust

  • 3 cups flour
  • 100 g vegan butter
  • water

For the filling

  • 2 cups (homemade) vegan cream cheese (from 2 liters plant milk) see link below for the instructions
  • 5 tbsp cornstarch
  • 6 tbsp cane sugar
  • zest of 1 lemon
  • 2 apples

Instructions
 

Prepare the crust

  • Create a Flour Well: On a clean, flat surface, pour the flour into a mound. Make a well in the center of the flour, creating a crater-like space for the butter and water.
  • Place the cold vegan butter into the center of the well. Cut it into pieces, using the flour to prevent the knife from getting too sticky.
    Using your fingertips, start rubbing the butter into the flour, working quickly to combine them. As you do this, gradually incorporate water, little by little, and more flour from the sides of the well into the mixture.
    Continue adding water until the dough just comes together; it should be moist but not sticky.
  • Form the Dough: Using your hands, gently gather the dough into a ball. Avoid overworking the dough to keep it tender and flaky.
    Wrap the dough into cling film and place it in the fridge.

Prepare the cheese

  • Prepare the cream cheese, following the instructions on my blog. Here soy or oat milk will work best!

Prebake

  • Preheat the oven to 180℃.
    Roll out the dough, keeping it wrapped lightly in the cling film. This way you don’t need to flour a surface.
    Try to gain a disc in the size of your tin.
  • Place the dough disc into the tart tin. With your fingers, press and pull up on the sides. The dough should have a 1-2 cm high “wall”.
    With a fork, pinch several times into the crust.
  • Prebake the crust for 10-15 minutes. Don’t brown it too much!

Assemble and bake the tart

  • Peel, deseed and cut the apples into slices.
    Cook them in a little bit of water for a few minutes. Drain well!
  • Blend the cream cheese, the sugar, the cornstarch and lemon zest together.
  • Take the crust out of the oven. Cover it nicely with the apples. Pour the cream cheese mixture over them, spread well.
  • Bake the tart until golden brown on top (approximately 20-25 minutes).

Try to see that it curdles well – best in this case is bio soy milk or oat milk.
