Creamy Greeny Soup (alkaline diet)
Equipment
- 1 blending device
Ingredients
- 1 handful green beans
- 1 small to medium brokkoli head
- 1-2 tbsp good quality olive oil
- 1/2 tsp curcuma
- 1 pinch black pepper
- 1/2 tbsp coriander seeds
- 2 tbsp fresh herbs like thyme or parsley, chopped or dried thyme or other dried herbs
- 3-4 tbsp seeds (sesame, pumpkin, sunflower)
Instructions
- Wash the beans, cut off the ends, cut them in small pieces and boil them in slightly salted water.
- Wash and pick the brokkoli in small pieces.
- In a pot, roast the spices in the oil, but on very low heat, until they start to smell nicely. Add the brokkoli, let roast for a minute or two. Add water, as much as you need to just cover the brokkoli. Add the herbs and some salt, and boil the brokkoli until soft (10-15 minutes).
- Take the soup off the heat and let cool down. In the meantime, drain the beans and place them in two bowls.
- Blend the brokkoli soup until creamy. If it turned out too thick, add a little bit of water. Season the soup to taste.Tipp: For a cheesy flavor, you can add some nutritional yeast! The soup then still stays alkaline.
- Pour the soup on the beans. Sprinkle with the seeds. Serve the soup with some nice homemade bread or our homemade grissini (recipe link below) – for your alkaline diet omit this.
