Tosta com Queijo (vegan)
This is a highly addictive snack recipe, based on what here in Portugal is called a “tosta com queijo” (cheese toast). I love to eat very simple, which is reflected in this easy to make toast recipe. A vegan mozzarella-like thick cheese sauce, made with soy milk, tapioca flour, nutritional yeast and salt. Enjoy this melty double bread roasted in fine olive oil with a crunchy green salad and some homemade ketchup, homemade vegan mayonnaise or mustard on the side!
Tosta com Queijo (vegan)
Tosta com Queijo is a very widely spread snack in Portugal and you find it in every village café. I made this cheese toast with a thick vegan cheese sauce. Simple, easy. I hope you enjoy it!
Ingredients
For the vegan cheese
- 12 tbsp soy milk
- 2 tbsp tapioca flour
- 1,5-2 tsp nutritional yeast
- 1 tsp olive oil or coconut oil
- 1 pinch salt
For the toast
- 4 slices white bread or toast bread
- 3 tbsp olive oil
- salt and pepper
Instructions
Prepare the cheese
- In a saucepan, mix all ingredients together. Turn on the heat and let the mixture thicken, stirring constantly. Set aside to cool down.
Prepare the toast
- In a pan, roast the bread in the oil on one side until nicely crunchy and golden brown. Turn around. Place 1-2 tablespoons of cheese on 2 of the bread slices. Season with salt and pepper. Place the other two slices on top, the roasted sides facing downwards.
- Roast the filled toasts on boths sides until golden brown. Turn carefully, as the cheese tends to melt fast – which is desired in a nice melty toast 🙂
Serve
- This tosta com queijo is best served with some mustard, ketchup or homemade mayonnaise and a crunchy green salad.
