Easypeasy Vegan Spaghetti Bolognese (onion-, garlic-free)
OMG, we love spaghetti, don’t we? If you want to be sure that your kids’ friends enjoy their meal in your house, spaghetti is something that always works! And if you have to let them eat them sauce-less … However, why not next time serve them a Vegan Spaghetti Bolognese made with Love, without onion and garlic, animal-friendly and therefore totally pure? I am sure they will also like this one!
Why no onion and garlic?
As you might have realised, all my recipes are onion- and garlic-free. You might also wonder why. Well, let me share my approach:
I personally have always reacted very strongly and negatively to food that goes into the category “heat” and “spicy” like onion, garlic, black pepper and pepperoni. They make my tongue and throat burn, stronger than in the average human being. This is primarily why I don’t cook with them.
In Ayurveda, foods are categorized based on their effects on the mind and body. According to Ayurvedic principles, onion and garlic have a strongly activity increasing effect. This makes inner calmness and deep meditation much more difficult.
Summary:
In spiritual and yogic practices, onions and garlic are often avoided because they interfere with meditation and spiritual focus by agitating the mind. As my husband and me try to focus on our spiritual awakening more than anything else, and we both never really liked their effect on our body and mind, abandoning onion and garlic was an obvious step. It requires some attention in cooking, that yes, as in all cuisines of the world both are a fix ingredient in most of the savory meals. But with some patience and trust, all comes to success 🙂

Easypeasy Vegan Spaghetti Bolognese
Ingredients
- 6 tbsp soy granules – soaked in hot water
- 1 cup (250 ml) tomato sauce (purée)
- 2 small carrots, finely diced
- 1,5 tbsp dried oregano
- 3 tbsp olive oil
- 200 g spaghetti
- salt and pepper
Instructions
Prepare the Bolognese Sauce
- Drain and gently squeeze the soy granules and set aside.
- Sauté the carrots in the olive oil for 2-3 minutes. Add the soy granules and sauté for another 2-3 minutes.
- Add the tomato purée, a little water (about ½ cup, depending on the consistency of your tomato product), the oregano, and a pinch of salt. Cover with a lid and simmer on low heat until the carrots are tender. Add more water if needed to maintain a saucy consistency.
Prepare the Spaghetti
- For the spaghetti, fill a pot halfway with water, add 1 tbsp of salt, and bring to a boil. Cook the spaghetti according to the package instructions.
Serve
- Enjoy your vegan spaghetti Bolognese with some Plamesan (homemade vegan parmesan – link in the notes below).
