Serving Recommendations

This chocolate pudding is best, in my opinion, when served pure. My husband loves it most when it is still warm, I prefer it chilled. However, you can add some vegan whipped cream, slices of strawberries or other fruits and serve together with vegan cookies of your choice.

Recipe Notes and Tips

  • Cornstarch: I have the impression that the products that are on the market don’t always work the same way. Some thicken better than others. So if you happen to realise that you have one with rather poor thickening power while making the pudding, solve another spoonfull of cornstarch in 1-2 spoonfulls of plant-milk and add it to the mixture, whisking well.
  • Sweetener: You can use agave syrup instead of the sugar. However, I tried both and in the version with agave syrup the pudding started to become liquid again after a while. This is why in this recipe I decided to use cane sugar.

Ingredients
  

  • 560 ml soy milk (or other plant milk)
  • 2,5 tbsp cornstarch
  • 2 tbsp cane sugar, raw
  • 5 tbsp natural and unsweetened cocoa powder

Instructions
 

  • Prepare the Cornstarch Mixture:
    In a small bowl, combine the cornstarch with approximately 1/4 cup of the soy milk. Stir well until the cornstarch is completely dissolved and the mixture is smooth. Add the cane sugar and cocoa powder and whisk together.

  • Heat the Mixture:
    Pour the remaining soy milk (1 3/4 cups) in a saucepan. Place the saucepan over medium heat. As soon as the milk starts to make bubbles, pour in the cocoa mixture, whisking continuously to ensure the cocoa powder and cornstarch are fully incorporated and there are no lumps.
  • Thicken the Pudding:
    Continue to cook the mixture, whisking frequently, until it starts to thicken. This should take about 5 minutes. Once the pudding reaches your desired consistency, remove it from the heat.

  • Serve:
    Pour the hot pudding into serving bowls. For a warm and comforting treat, enjoy as soon as it has cooled down to avoid burned tongues… Alternatively, you can let the pudding cool to room temperature, then refrigerate it for a chilled dessert.
